Paleo Apple Pie Bites


I don’t know why it is, but don’t these beautiful apple pie bites look like they are welcoming in the autumn season? I mean, not that I wouldn’t love to return to being the age I was last year and celebrating my 20-something-eth birthday again, but…

Over and over again, I keep thinking, “these would be perfect for autumn desserts”, yet we are no where near autumn! Guess it’s the ingredients and layout that make me feel that way. The apples, the cinnamon, the orange and brown hues.

Either way, I made the recipe for these, and enjoyed them so much that I could barely wait to share with you. I made these perfect paleo apple pie bites after I made the Coconut Banana Bread Bites and seriously, having both of them in my refrigerator, I didn’t know which one I thought was best.

How about this, you try both of them, and let me know what you think! These, or the Coconut Banana Bread Bites? Maybe you are like my husband though and can’t shake the addiction to my Coconut Fudge Truffles though? You be the judge!

Honestly, they remind me of Larabars (but better) as they are freshly homemade, chewy, apple cinnamony, and nicely date/maple sweetened.

Very delicious, easy to make, vegan, gluten free, paleo-friendly, and obviously, no baking required, so instant gratification is okay here.

Impromptu thought!

But do you know what I just thought about?

The flavor of these apple pie bites remind me of apple crisp! Yes! Cinnamon apple crisp. Maybe I should have called them cinnamon apple crisp bites?

On second thought…

Never mind, I have a paleo apple crisp already up, and I wouldn’t want to confuse you 🙂

Serves: 14-16

½ cup whole raw almonds
1-1/4 cups dried apple chips
8-9 soft pitted dates
1 tbsp pure maple syrup
1 to 1-1/2 tsp ground cinnamon
1 tsp apple pie spice
1 tbsp coconut water (or water)

Using a food processor, pulse the almonds until a course flour is formed.
Next, add the dried apple chips and pulse a couple times until they are well incorporated.
Then add and pulse together all remaining ingredients except the coconut water.
After the mixture is all complete, it may be a little dry and crumbly. To fix this so that the mixture is rollable, add 1 tbsp of coconut or distilled water to the food processor, and pulse until a moist and rollable mixture is created.
Once complete, remove s-blade from food processor, and begin separating and rolling apple pie bites in your palms until perfect little spheres are formed.
Do this for each apple pie bite, while trying to keep them uniform in size.
When complete, store the bites in an air-tight container until ready to serve

As stated in the directions, you may certainly store these in an air tight container and they will keep for a while, although I doubt you will keep them for long because they are yummy.
