Spring is here. Summer is on the horizon. And it is truly getting hot outside. Time for some summery recipes for a cool down. I don’t know about you but the Midwest can be brutal around this time of year! And, with that in mind I am thinking cool treats, fruit, fruit, and more ripe fruit, and pie!
But also… hold your horses, I am thinking low calorie and guilt free too sooooo… hmmm…

Just letting you into my mind every time I go into the kitchen. There is always a “hmmm” moment before I come up with something bright.
Well this is about to be bright!
I have for you a very silky sweet blueberry pie smoothie recipe that I have had up my sleeve for a while now, but I had to do some thinking about it because I wanted to make a recipe that wouldn’t make me abandon the blender in a snap, rush to get a mixing bowl, gluten free flour, sugar, and blueberries and start making pie, see….
I didn’t want to be teased with a smoothie, so I had to make it right. It had to be satisfying.
Then, I decided to experiment, and this is what popped out of the blender! Yummy huh? Of course you have to make it to know!
A perfect pie-like blend of blueberries, vanilla, cinnamon, and gluten free oats. Easy as pie!
You will truly like this.
BLUEBERRY PIE SMOOTHIE

Serves: 1-2 servings
INGREDIENTS
- ½ c coconut almond milk
- ¼ c gf quick oats + ¼ cup water (microwave for 45 seconds)
- ¾ c frozen blueberries
- ½ ripe frozen banana (or fresh)
- ⅛ tsp pure vanilla extract
- dash of cinnamon
INSTRUCTIONS
- Place ¼ c of gluten free quick oats, and ¼ c water in a bowl, microwave 45 seconds +/-
- Next, place all ingredients in listed order in your blender and blend until smooth.
- Add oats to the top for fancy garnish (or some extra cinnamon 🙂
