Tina’s Basmati Rice & Yellow Lentil Salad
2 cups basmati rice, cooked and cooled
1 cup yellow lentils, cooked and cooled
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/2 cucumber, seeded and chopped
Juice from 1/2 lemon
1/2 cup grape tomatoes, quartered
1/4 cup garbanzo beans
1 tsp. cumin
3 Tbl. Olive oil
Salt and pepper to taste
- Mix together all the ingredients except the olive oil, salt and pepper.
- Drizzle salad with olive oil and toss gently.
- Season with salt and pepper to taste.
- Serve this side-dish chilled.
