Artichokes are among my favorite vegetables. Native to the Mediterranean—a region with one of the lowest rates of chronic disease—this vegetable is as versatile as it is nutritious. One large artichoke contains just 25 calories, no fat, 170 milligrams of potassium, and is a good source of vitamin C, folate, magnesium and dietary fiber. Artichokes also rank as the number one vegetable in antioxidant content. Never cooked one? It’s simple. Just watch my video, and you’ll soon be an expert.
