Ingredients
2 cups 2% milk
1 egg
2 tsp. vanilla
¼ cup dark brown sugar
½ tsp. cinnamon
Dash of freshly grated nutmeg
⅛ tsp. salt
1 cup quinoa
1 pear, sliced (about 6 oz.)
Powdered sugar and maple syrup for serving, optional
Directions
Preheat oven to 325ºF. Place the milk, egg, vanilla, brown sugar, cinnamon, nutmeg and salt in a bowl and whisk smooth. Stir in the quinoa. Place the pear slices evenly along the bottom of an 8” x 8” baking pan. Pour the quinoa mixture over the pears, spreading the quinoa so it’s even. Place in the oven for 35 – 45 minutes or until the mixture is just set. Allow to cool slightly before cutting. Garnish with powdered sugar and maple syrup, if desired.
