Just because the holidays are over doesn’t mean you have to give up wine and liquor. Even if your resolution is to lose weight, there’s room in a healthy diet for a cocktail now and then. One of my favorite, original cocktails is my Pomegranate, Honey & Ginger Refresher. Mix it up in minutes, and for just 160 calories, you’ll be satisfied and happy in no time. I guarantee my work!
Ingredients
½ cup/3 oz. pomegranate seeds
1 tsp. honey
½ tsp. grated ginger
1 Tbsp. lemon juice
1 oz. vodka
Splash of club soda
Directions
Place pomegranate seeds, honey, ginger and lemon juice in a cocktail shaker. Muddle the mixture very well to extract as much juice from the pomegranate seeds as possible. Add vodka and shake. Fill a martini glass with ice. Strain mixture over the ice. If you desire, stir in a few of the pomegranate seeds. Pour in a splash (2 oz. or so) of club soda, give it a quick stir and enjoy!
