This is an inspiring post. A friend of mine in the United Kingdom was interested in triathalons and participated in some before he outgrow that enthusiasm. Another friend of mine in Melbourne, Australia trains for mini triathalons with his teenage son. They participate in these events together as a wonderful way to promote father-son bonding experiences.
Cogratulations on your focused mindset and cycling aspirations. Perspevernece is known to take people further than they imagine. How far you go begins and ends in you.

Hi, Liara! Thank you so much for sharing your stories and for your words of encouragement. I’m trying to persevere on the road AND in the kitchen. I created some terrific recipes this weekend that I’ll post later week. Stay tuned! They’re all nutrient-rich and quick to prepare, which leaves me more time for a few more miles. : )
